Strawberry Cream Cheese Loaf

Ingredients

  • Loaf
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries chopped
  • Optional Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350°F
  • Grease loaf pan
  • Mix dry ingredients
  • Cream butter, cream cheese, sugar
  • Add eggs and vanilla
  • Fold in dry ingredients
  • Gently mix in strawberries
  • Pour into pan
  • Bake 60-70 minutes
  • Cool completely
  • Optional: Drizzle with glaze

Notes

Use fresh, ripe strawberries
Don't overmix batter
Test with toothpick for doneness
Let cool before slicing
