Slow cooker creamy potato soup

Slow cooker creamy potato soup is the perfect comfort food made easy. Loaded with potatoes, cream, cheese, and savory flavor, this soup is warm, hearty, and made for cozy nights in.

Equipment

  • 6-quart slow cooker
  • - Cutting board and knife
  • Vegetable peeler
  • Measuring cups and spoons
  • Immersion blender or potato masher (optional)
  • - Ladle

Ingredients
  

  • 6 medium russet potatoes peeled and diced
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 2 celery stalks diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 4 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme optional
  • ½ cup sour cream optional, for topping
  • Cooked bacon bits and green onions for garnish

Instructions
 

  • Add potatoes, onion, garlic, celery, chicken broth, salt, pepper, and thyme to the slow cooker.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours, until potatoes are tender.
  • Use an immersion blender to blend some of the soup for a creamier texture, or mash with a potato masher if you prefer it chunky.
  • Stir in butter, cream, and shredded cheese. Cook for another 20–30 minutes until melted and smooth.
  • Taste and adjust seasoning if needed. Serve hot topped with sour cream, bacon bits, and green onions.

Notes

You can use Yukon Gold potatoes for a creamier texture. If you like thicker soup, blend more of the mixture; for thinner soup, add more broth or milk at the end.
