Instructions
 

  • Preheat your oven to 375°F and grease a 9x13 inch baking dish with butter.
  • Wash and peel potatoes, then slice them into 1/8-inch thick rounds using a sharp knife or mandoline slicer for consistent thickness.
  • In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux, stirring constantly to prevent burning.
  • Gradually add milk and cream while whisking continuously to prevent lumps from forming. Continue cooking until sauce thickens, approximately 5-7 minutes.
  • Remove sauce from heat and stir in 1.5 cups of cheese, salt, pepper, and garlic powder until smooth and well combined.
  • Layer half of the sliced potatoes in the prepared baking dish, overlapping slightly. Pour half of the cheese sauce over the potatoes.
  • Add remaining potatoes in a second layer, then pour the rest of the cheese sauce evenly over the top.
  • Sprinkle remaining 1/2 cup of cheese over the surface for extra golden browning.
  • Cover with aluminum foil and bake for 45 minutes. Remove foil and continue baking for 20-25 minutes until top is golden brown and potatoes are fork-tender.
  • Let rest for 10 minutes before serving to allow layers to set properly.
