Sausage Summer Skillet recipe

A bold, simple one-pan dish, the Sausage Summer Skillet recipe combines smoky sausage with fresh vegetables for a nutritious and satisfying meal that’s ideal for summer nights.

Equipment

  • Large skillet or sauté pan
  • - Wooden spoon or spatula
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Ingredients
  

  • 1 tablespoon olive oil
  • 12 oz smoked sausage or kielbasa sliced into rounds
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 1 red bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels fresh, canned, or frozen
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: fresh parsley or grated Parmesan for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside. In the same skillet, add zucchini, squash, bell pepper, and garlic. Sauté for 4–5 minutes until vegetables begin to soften. Add cherry tomatoes and corn. Cook for another 3–4 minutes, stirring occasionally. Return sausage to the skillet. Sprinkle with Italian seasoning, salt, and pepper. Toss to combine and cook for an additional 2 minutes to heat through. Remove from heat, garnish with parsley or Parmesan if desired, and serve hot.

Notes

You can substitute chicken sausage or turkey sausage for a leaner option. If using fresh corn, slice it off the cob before adding. For extra heat, add a pinch of red pepper flakes or chopped jalapeño.
