Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/4 teaspoon salt
  • 3 cups quick-cooking oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract

Instructions
 

  • Line baking sheets with wax paper or parchment paper and set aside.
  • In a large heavy-bottomed saucepan, combine sugar, milk, butter, and salt. Bring the mixture to a rolling boil over medium heat, stirring constantly.
  • Once boiling, continue to cook for 90 seconds, stirring continuously to prevent burning.
  • Remove the saucepan from heat and immediately stir in peanut butter and vanilla extract until completely smooth and combined.
  • Add the oats and stir vigorously until all oats are well coated with the peanut butter mixture.
  • Working quickly, drop spoonfuls of the mixture onto the prepared wax paper using a cookie scoop or spoons. Make sure to work fast as the mixture will begin to set as it cools.
  • Allow the peanut butter no bake cookies to cool completely at room temperature for about 30 minutes until firm.
  • Once set, carefully remove cookies from the wax paper and serve or store.
