Ingredients
  

  • 1 pound ground beef 80/20 blend recommended
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg beaten
  • 1/4 cup finely diced onion
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup ketchup divided
  • 2 tablespoons Worcestershire sauce

Instructions
 

  • Preheat your oven to 425°F and generously spray a 12-cup muffin pan with cooking spray to prevent sticking.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, beaten egg, diced onion, minced garlic, salt, pepper, oregano, 2 tablespoons of ketchup, and Worcestershire sauce. Mix gently with a fork until just combined, being careful not to overmix as this can result in tough meatloaf.
  • Divide the meat mixture evenly among the 12 muffin cups, filling each about 3/4 full. Press the mixture lightly into each cup to eliminate air pockets, but avoid packing too tightly.
  • Brush the tops of each meatloaf muffin with the remaining 2 tablespoons of ketchup for added flavor and appealing color.
  • Bake in the preheated oven for 15 minutes, or until the internal temperature reaches 160°F when tested with a meat thermometer.
  • Remove from oven and let rest for 2-3 minutes before removing from the muffin pan. Run a knife around the edges if needed to help release the meatloaf muffins.

Notes

The 80/20 ground beef blend provides the ideal fat content for moist, flavorful meatloaf muffins. Leaner ground beef may result in drier texture, while higher fat content can cause excessive shrinkage. If using ground turkey or chicken, add an extra tablespoon of milk to maintain moisture levels.
