Ingredients
  

  • 3 large ripe but firm pears Anjou or Bosc work best
  • 4 oz high-quality blue cheese crumbled
  • 2 oz cream cheese softened
  • 2 tablespoons chopped toasted walnuts optional
  • 1 tablespoon fresh chives finely chopped
  • 1 teaspoon honey
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice
  • Fresh thyme sprigs for garnish
  • Drizzle of balsamic glaze optional

Instructions
 

  • Wash and dry the pears thoroughly. Cut each pear in half lengthwise, creating 6 halves total.
  • Using a melon baller or small spoon, carefully scoop out the core and seeds from each pear half, creating a small cavity for the filling. Remove any tough fibrous material.
  • Brush the cut surfaces and cavities with lemon juice to prevent browning.
  • In a mixing bowl, combine the crumbled blue cheese and softened cream cheese. Mash together with a fork until well blended but still slightly chunky.
  • Stir in the chopped walnuts, fresh chives, honey, and black pepper until evenly distributed.
  • Divide the blue cheese mixture evenly among the 6 pear halves, mounding it slightly in the center cavity.
  • Arrange the stuffed pears on a serving platter. Garnish with fresh thyme sprigs and drizzle with balsamic glaze if desired.
  • Serve immediately at room temperature, or chill for 30 minutes before serving for firmer texture.

Notes

Select pears that are ripe but still firm to prevent them from becoming mushy during preparation. Bartlett pears can be substituted but may be more delicate to handle. The blue cheese mixture should be made fresh for optimal flavor and texture. If preparing in advance, assemble just before serving to maintain the best appearance and prevent excess moisture from affecting the cheese filling.
