Ingredients
  

  • 3 pounds russet potatoes peeled and sliced thin
  • 1 pound thick-cut bacon chopped
  • 2 cups sharp cheddar cheese shredded
  • 1 cup heavy cream
  • 1/2 cup butter melted
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh chives chopped
  • 1/2 cup sour cream

Instructions
 

  • Preheat your oven to 375°F and grease a 9x13 inch baking dish with butter.
  • Cook the chopped bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Remove bacon and set aside, reserving 2 tablespoons of bacon fat.
  • In the same skillet with reserved bacon fat, sauté diced onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  • In a large mixing bowl, combine heavy cream, melted butter, sour cream, salt, pepper, paprika, and cayenne pepper. Whisk until smooth.
  • Layer half of the sliced potatoes in the prepared baking dish, overlapping slightly. Pour half of the cream mixture over the potatoes.
  • Sprinkle half of the cooked bacon and half of the sautéed onion mixture over the potatoes. Top with half of the shredded cheddar cheese.
  • Repeat the layering process with remaining potatoes, cream mixture, bacon, onions, and cheese.
  • Cover tightly with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until the top is golden brown and potatoes are tender.
  • Let the carb bacon cheddar casserole rest for 10 minutes before serving. Garnish with fresh chives.

Notes

Choose potatoes that are similar in size for even cooking. Russet potatoes work best for this carb bacon cheddar recipe due to their starchy content and ability to absorb flavors. If you prefer a lighter version, you can substitute half-and-half for heavy cream, though the texture will be slightly less rich. The casserole can be assembled up to 24 hours in advance and refrigerated before baking.
