Ingredients:

• 3 ½ cups all-purpose flour

• 2 ¼ tsp (1 packet) active dry yeast

• ¼ cup granulated sugar

• 1 tsp salt

• 1 cup whole milk, warm (about 110°F)

• 3 large eggs, room temperature

• ½ cup unsalted butter, softened

• 1 egg (for egg wash)

• 1 tbsp water (for egg wash)

Instructions:

1. Activate Yeast: In a small bowl, combine the warm milk, sugar, and yeast. Stir and let it sit for 5–10 minutes until it becomes frothy.

2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour and salt.

3. Combine Wet Ingredients: In a separate bowl, whisk together the eggs and softened butter until well combined. Once the yeast mixture is frothy, add it to the egg and butter mixture.

4. Form the Dough: Add the wet mixture to the dry ingredients, stirring until a dough forms. Turn the dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic.

5. First Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1–1.5 hours, or until it doubles in size.

6. Shape Rolls: After the dough has risen, punch it down gently. Divide the dough into 12 equal pieces and shape them into round rolls. Place them in a greased 9×13-inch baking dish or on a parchment-lined baking sheet.

7. Second Rise: Cover the rolls loosely with a towel and let them rise for another 30-45 minutes until puffy and slightly touching each other.

8. Preheat Oven: While the rolls rise, preheat your oven to 350°F (175°C).

9. Egg Wash: In a small bowl, whisk the egg with the water. Brush the egg wash over the top of each roll for a golden finish.

10. Bake: Bake the rolls in the preheated oven for 18–22 minutes or until they are golden brown on top and sound hollow when tapped on the bottom.

11. Cool and Serve: Allow the rolls to cool slightly before serving. Enjoy them warm with butter, jam, or as an accompaniment to your meal!

Tips & Variations:

Make Ahead: These rolls can be made the night before. After the first rise, punch down the dough, shape the rolls, and refrigerate them overnight. The next day, let them come to room temperature and continue with the second rise and baking.

Add-ins: For extra flavor, you can add a little vanilla extract to the dough or sprinkle sugar on top before baking for a sweet crust.

These milk brioche rolls are perfect for any occasion, from everyday meals to special celebrations. Whether you’re using them for sandwiches or just enjoying them with butter, their soft, pillowy texture will be a hit!
