Instructions
Step 1: Prepare the Crust
1. Preheat the oven to 350°F (175°C).
2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
3. Press the mixture firmly into a 9-inch pie pan, ensuring the bottom and sides are evenly covered.
4. Bake for 8–10 minutes, then remove from the oven and let it cool completely.
Step 2: Make the Lemon Chiffon Filling
1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
2. In a medium saucepan over low heat, whisk together egg yolks, ½ cup sugar, lemon juice, lemon zest, and salt. Cook while stirring continuously until the mixture thickens slightly (about 5 minutes).
3. Remove from heat and stir in the bloomed gelatin until fully dissolved. Let the mixture cool to room temperature.
4. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining ¼ cup sugar and continue beating until stiff peaks form.
5. In another bowl, whip the heavy cream until soft peaks form.
6. Gently fold the whipped cream and beaten egg whites into the cooled lemon mixture until well incorporated.
Step 3: Assemble and Chill
1. Pour the lemon chiffon filling into the prepared crust and spread evenly.
2. Refrigerate for at least 4 hours or until set.

1. In a bowl, whip the heavy cream and powdered sugar until soft peaks form.
2. Spread or pipe over the chilled pie.
3. Garnish with lemon zest or lemon slices, if desired.
