Ingredients

1 pound flank steak or sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

3 garlic cloves, minced

2 tablespoons oyster sauce

1 tablespoon soy sauce (for sauce)

1 tablespoon hoisin sauce (optional for sweetness)

1 teaspoon sugar

½ cup beef broth or water

Salt and pepper to taste

Directions

In a bowl, toss sliced beef with 2 tablespoons soy sauce and cornstarch. Let sit for 10–15 minutes.

Heat 1 tablespoon of oil in a wok or skillet over high heat. Add beef and stir-fry for 2–3 minutes until browned. Remove from pan and set aside.

Add remaining oil to the pan. Stir-fry peppers and onion for 2–3 minutes until slightly tender but still crisp. Add garlic and cook for 30 seconds.

Return beef to the pan. In a small bowl, whisk together oyster sauce, remaining soy sauce, hoisin sauce (if using), sugar, and beef broth. Pour into the pan.

Stir everything together and cook for another 2–3 minutes until sauce thickens slightly and coats the ingredients. Adjust seasoning if needed.

Serve hot over rice or noodles.
